Arequipe Sauce

This sauce is used for almost everything in Colombian culture. It goes on sandwiches, cookies, and even ice cream! While I mostly only use it on Alfadores Cookies, it tastes so good I would willingly use it on just about anything!

Note: DO NOT DOUBLE THE RECIPE!!!  The first time I made this recipe I doubled it. There is plenty of sauce on just one batch. Trying to cook this sauce for that long of a time will take a lot longer than the average 3 hours it already takes. Mine was still a milk texture and off-white after 5 hours of cooking. We were luckily able to save it because some Colombian chefs were at our house right then. They made a bit of rice, chopped it up in a food processor, and put it in the sauce. Somehow, they saved the concoction from complete annihilation. Don't make the same mistake. If you must make a larger amount, use to separate pots.

Ingredients:
  • 96 oz whole milk
  • 1 1/2  of pounds sugar
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cinnamon stick


Directions:
  1. In a medium pot, combine all the ingredients and bring to a boil.
  2. Reduce the heat to medium-low, stirring often with a wooden spoon for about 3 hours or until the color changes to caramel and the mixture is thick as a pudding. Let it cool.
  3. Pour into a glass container and cover. Refrigerate up to a week.
