Irish Soda Bread

An Irish Girl who loves to make Irish Soda Bread. Who would have guessed it? Well it's true. I love love love Irish Soda Bread. It is a commen recipe being made in our house, especially around St. Patrick's Day. It is amazing!!! This is a recipe created by my family that will be used for years after the St. Patrick's Day party at our house no longer occurs.

Ingredients:
- 4 cups of all-purpose flour (+1 tablespoon for busting)
- 1/2 cup of sugar
- 2 teaspoons of baking powder
- 1 teaspoon of baking soda
- 3/4 teaspoons of salt
- 1 1/2 cups of seedless raisins
- 1 tablespoon of caraway seeds (or more)
- 2 eggs, lightly beaten
- 1 1/4 buttermilk
- 1 cup of sour cream
Directions:
- Preheat the oven to 350 degrees
- Combine the 4 cups of flour, sugar, baking powder, baking soda, salt, raisins, and caroway seeds in a large bowl and mix throughly.
- Blend eggs, buttermilk, and sour cream in a small bowl. Stir into the flour mixture just until flour is moistened.
- Knead the dough in the bowl about 10 times. The dough will be sticky. Shape into a ball.
- Grease a 8" castiron skillet. Place the dough ball into the skillet. Cut 4" x 3/4" deep across top of dough twice to make two slice mark in the shape of a cross. Sprinkle the remaining 1 tablespoon of flour on top.
- Bake the bread for 65-75 minutes or until a toothpick comes out clean. Cool in the skillet for 10 minutes and then remove to a wire rack to finish cooling.
