Lemon Bars

It's another hot summer! You're running around in t-shirts and shorts, heading to the beach, swimming in the pool, and vacationing in your family's own unique way. But whatever way you turn, you're going to see little boys and girls out selling refreshing lemonade for the super cheap expense of a quarter a cup. Now hopefully you're like me, and try to buy from as many as possible. I think these kids are absolutely adorable. They don't realize that the measly $14 they make doesn't even cover the cost of the lemonade they are selling. But the point is to get these kids earning money for themselves. I did it, my friends did it, and I'm sure many of you did, too.

Ingredients:
- 1 cup butter, softened
- 1/2 cup sugar
- 2 cups all-purpose flour
- 4 eggs
- 1 1/2 cups sugar
- 1/4 cup all-purpose flour
- 2 lemons, juiced
Directions:
- Preheat oven to 350 degrees F
- In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into bottom of an ungreased 9x13 inch pan.
- Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
- Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. Cut into squares and serve.
